Gross weight Vs. Net Weight

Have you noticed how commercial beef from supermarkets shrinks nearly in half when cooked!
Or after you defrost meat from the freezer, you often find water left in the bowl!
This is because commercial beef is full of fluids.

Beef purchased from supermarkets likely to end up with an actual fraction of that weight as net weight.

Ranch2Fork on the other hand only offers dry aged beef.

  • Aging, by placing beef in cold storage just above freezing temperature with high airflow reducing level of liquids in the flesh.
This process makes the beef very tender and less “chewy”.
Commercial beef is not aged, or only aged for a short time often under 12 hours to maximize retail weight.
